If I can't hit my highest Interval (AT +5 for example) should I stop and try again another day, or go ahead with the workout, at a lower AT?

Go ahead and keep going! Congratulate yourself for making it that far and try again the next time. Remember, you do not have to get in shape in one day or lose one pound in one day. What you want to do is to create consistency in your workouts and stay committed.
